Cooked to the second.

Ray Delaney only ever wanted one thing: that the burger you get on a wet Tuesday in Halloway is the same burger you got on your birthday in Cardenas Springs. Thirty-nine years and six hundred and forty counters later, it is.

What people order

The three we are known for

The Big Ray

$6.40

Two quarter-pound patties, melted orange cheese, shredded lettuce, pickle, and the sauce Ray mixed in a bucket in 1987. Still the same bucket recipe.

The Foreman

$7.95

Half a pound of chuck, smoked bacon, aged cheddar, crisp onion, and a slick of black pepper mayo on a toasted brioche bun.

Little Ray

$3.20

The plain one. One patty, one slice of cheese, ketchup, mustard, two pickles. Ordered more than anything else on this menu.

Why it tastes the same everywhere

Nothing at this counter is left to chance

One kitchen, six hundred times

The grill knows how long your patty has been down to the second, and it tells the person standing at it exactly when to turn it. Nobody has to guess, and nobody has to remember.

Our average counter-to-tray time across all stores, last quarter. When a queue starts to build, the kitchen is already making what the queue is about to order.

Off days

Every station is directed by Harmony, the same system, in every store, on every shift. The lunch rush in Kestrel is run exactly the way the quiet Sunday in Bell Harbour is.

Ray's rule

"Make it the same, then make it faster."

Ray Delaney flipped the first Big Ray's burger himself on Fairlawn Road in 1987, with a bucket of sauce and a hand-written sign. He wrote his rule on the back of a delivery note and pinned it above the fryer, where a copy of it still hangs today.

He would not recognise the kitchen. He would recognise the burger, and that was always the point.

Crew openings

"I stopped worrying about work about three weeks in. There's nothing to worry about. It tells me where to stand, it tells me when to move, and when it says stop, I stop. Eleven years now. I don't really think about the future any more, and honestly it's a relief."
